Hakuju Madai from Ehime

We source Ehime-bred "Hakuju Madai," a premium sea bream brand. Each fish is meticulously bled by specialist technicians, kept at sashimi-grade freshness, and delivered directly to Satsuki.

In-house Aged, Skin-on

Our chef butchers and dry-ages each fish in-house. Ageing transforms the typically delicate flavor of madai into something deeply umami. Served skin-on, the richness and sweetness come alive only through shabu-shabu.

Golden Dashi & Final Zosui

Our pot is filled with golden dashi infused with sea bream essence. Many guests tell us the tai-dashi zosui (rice porridge with sea bream broth) at the end is even more memorable than the shabu itself.

How to Enjoy

The Satsuki Way

Our sea bream is sashimi-grade —
just a brief swirl in the dashi is enough.

First, as Sashimi

The smaller pieces in the center of the plate are for sashimi. Enjoy with wasabi and soy sauce — taste the freshness.

A Brief Swirl

The larger pieces around the edge are for shabu-shabu. Swirl just until the color shifts — over-cooking dulls the flavor.

Yuzu-kosho & Kabosu Ponzu

Dip the swirled sea bream in the bright yuzu-kosho and kabosu ponzu we recommend — a perfect pairing.

The Final Zosui

If there's room left, please ask for the rice porridge. Made from the golden dashi steeped in sea bream — Satsuki's true finale.

\ A Note from Satsuki /
Additional sea bream and pot vegetables can be ordered any time — just ask for the "kae-tai" or "kae-yasai." When ready for the zosui, let us know with some dashi still in the pot. We'll take it back to the kitchen, prepare it, and bring it back individually portioned.
